Exclusive Interview with Cayman Cookout Celebrity

The Brasserie was the first restaurant that Cindy Hutson ate at on her first trip to the Cayman Islands.

“Dean Max, Delius (Cindy’s partner) and I have been friends from way before we even opened Ortanique Camana Bay,” says Cindy, this month’s Brasserie Harvest Dinner Guest Chef.

In November 2010, Cindy and Delius opened Ortanique Camana Bay; inspired by the sea and sun, the ‘Cuisine of the Sun’ restaurant menu combined tasty Caribbean flavours and fresh, local ingredients.

While this restaurant closed after its five-year contract ended, Cindy and Delius continue to run and own Ortanique on the Mile in Coral Gables, and Cindy has expanded her cuisine to Harbour Island in the Bahamas.

As to what signature flair Cindy will be bringing to the Harvest Dinner

“I’m feeling the island vibes of course, and thrilled to death that I will have access to The Brasserie’s gardens and freshly caught fish”, she says.

“I feel like guests will be excited to reminisce over the flavours of Ortanique at Camana Bay, so I am going to stay true to those flavours.”

Caribbean pumpkin, callaloo, gungo peas, curry leaf, pak choi and fresh coconut will be some of the local produce featuring on the menu at this Harvest Dinner.

“I have not kept in contact with the Cayman farmers and producers, but will never forget how they catered to all of us chefs, growing what we needed to keep our menus fresh and trendy.”

What are you looking forward to most about this visit during Cayman Cookout

“Catching up with all our friends and chefs attending Cayman Cookout. Great times, ideas and stories are the results of chefs, producers, fishermen and friends playing hard over this weekend.”

Cayman Cookout will be the first time that Cindy and Delius have returned to the Cayman Islands in nine years. 

“Oh, this is a very special visit for us.

“Our favourite memory of the Cayman Islands was spending most Sundays on the beach after brunch with friends or family if they were there visiting. Chill time eating and drinking and just hanging out.”
